Baker Gramercy — Custom Fit-Out, Fold Tile Panels, and a Bakery Built Around the Craft
Baker Gramercy is a contemporary bakery designed to reflect what's made inside it. Our brief was to build an interior that felt honest about its materials and clear about its purpose — somewhere that puts the baking on show without getting in the way of it.

The counter panels
The standout element is the faceted timber and brass counter panelling. Inspired by the folding and lamination process of croissant making, the angular surfaces reference the craft itself — layered, deliberate, and precise. The geometric fold pattern is something we'd been developing in our own work, and Baker Gramercy gave us an opportunity to push it further in a commercial setting. It's a precursor to what later became our FOLD System.

Cabinetry and joinery
The cabinetry throughout keeps to the same principles — natural timber, simple geometry, nothing unnecessary. Storage and prep space are built in without interrupting the sightlines to the baking area. Customers can watch production from the counter, which was central to the brief.

The breadrack
A custom timber breadrack sits behind the counter — functional first, but considered in its detailing. Timber frames with black metal racks keep the loaves visible and accessible while staying visually clean.

Custom metal furniture
Seating and table frames are custom-made in powder-coated metal, proportioned to suit the space and the light. The vaulted ceiling pulls natural light through the room all day — the furniture needed to sit quietly underneath it rather than compete.

The menu
A custom hand-painted menu board, made to fit the specific wall space and painted to match the palette of the interior. Functional, but considered as part of the whole.
The result is a space that works efficiently as a bakery and communicates clearly what kind of place it is. Material choices are deliberate but restrained — the quality of the environment reflects the quality of what's being made.
The faceted counter panels were an early development of what later became our FOLD System — modular wood wall panels for hospitality and retail interiors.
